Sweet Potato Pancakes Ingredients: 1/2 cup cooked and mashed sweet potato, 2 eggs, 1/4 cup of flour, pinch of baking Powder, 1tsp honey, pinch of salt. How to prepare: Mix well mashed sweet potato, flour, eggs, baking soda and salt. Spread the batter on frying pan like normal pancakes and cook. Watch that they are cooked thoroughly, but not burned.
